NonPost


I was going to post about this coconut cake with lemon curd filling (homemade lemon curd, that is) that I made for Mike's birthday, but then it occurred to me that Meredith doesn't like coconut, and Elizabeth barely has time email us or fulfill her empty blogging promises, much less make a multi-step, multi-process layer cake. So really there's no point in waxing poetic about a recipe that no one else will use, but I had already taken the pictures so I'm posting them anyway.

Here's the photo of the cake. It was awesome, especially the homemade lemon curd.

  1. You drama queen. I could have told you my tip about microwaving the lemon curd to thicken it (if it is taking too long). My last lemon curd experience got a review from my snobbish British ex-roommate who said it tasted professional!

  2. Actually, could you send the recipe?! NaNeil loves 2 things in this life: coconut and lemon desserts. It's his birthday Saturday and I don't have work on Friday. This is genius!

  3. Brock doesn't like lemon, nor does mom, and I really don't like coconut, otherwise I would seriously consider this for Easter. Any other Easter dessert suggestions? I really am feeling a need to start baking.

  4. Mom likes Ina Garten's coconut cupcakes (which you obviously wouldn't). I made a carrot cake last year, and it went over well. I really like cake, though. I like to make them and to eat them.
